Egg and Veggie Bowl

I realize this is hardly a recipe, but with our busy schedule/having a 9 month old/eating clean I sometimes don't have time to put together a nice dinner.  Sometimes my meals are made in the microwave and are still yummy!  They just happen to be ready in under 10 minuets!

So by the end of the day I usually have 1-2 green containers (veggies) and 1-2 red containers (protein) to eat.  This is so quick and so yummy and meets both of those needs!



Ingredients

2-4 eggs (you can do whatever you need to meet the requirement of red containers for the day)
1 bag of steamable, mixed veggies (entire bag is about 2 greens)

Directions

1. Throw bag of veggies in to the microwave and cook according to bag.
2.  While veggies are cooking...crack eggs in to a microwave safe bowl.
3.  Beat with a fork
4.  Put in microwave and cook for 2 min.
5.  Add bag of veggies to eggs and eat!
6** You can add cheese too if you haven't used your blue container yet!

I know it may sounds strange, but it is SO good!
