Crock Pot Taco Salad - 21 Day Fix Approved
We are busy busy busy. Like we have 1 day home together as a family during the week to sit down and enjoy a meal let alone spend a lot of time preparing one! So I need quick and simple recipes! This Crock Pot Taco Salad is just that! And it doesn't skimp on flavor either. It is delish!
Ingredients
3-4 FROZEN chicken breast
2 cans black beans
1 cup water
Taco Seasoning
Romaine Lettuce, chopped
Tomato, chopped
Steamed Corn
Brown Rice
Greek Yogurt
Cheese
Directions
Place FROZEN chicken, beans, taco seasoning and water in your crock pot. Cook 6 hours on HIGH.
When there is 15min left shred the chicken and place it back in to finish cooking.
While it finishes cooking make your brown rice and assemble your salad!
SO easy! Use the Greek Yogurt instead of Sour Cream. Figure out your containers according to what you need, but this is what I used...
Romaine- 2 Green
Tomato- 1/2 Green
Steamed Corn- 1/2 Green
Chicken- 1 1/2 Red
Greek Yogurt- 1/2 Red
Brown Rice- 1 Yellow (if you only have 1 Yellow left, skip the rice)
Beans- 1 Yellow
Cheese- 1/2 Blue (Or if you have Blue to spare us 1 Blue. Maybe 1/2 cheese and 1/2 Avocado!)
