Crock Pot Taco Salad - 21 Day Fix Approved
We are busy busy busy. Like we have 1 day home together as a family during the week to sit down and enjoy a meal let alone spend a lot of time preparing one! So I need quick and simple recipes! This Crock Pot Taco Salad is just that! And it doesn't skimp on flavor either. It is delish!
Ingredients
3-4 FROZEN chicken breast
2 cans black beans
1 cup water
Taco Seasoning
Romaine Lettuce, chopped
Tomato, chopped
Steamed Corn
Brown Rice
Greek Yogurt
Cheese
Directions
Place FROZEN chicken, beans, taco seasoning and water in your crock pot. Cook 6 hours on HIGH.
When there is 15min left shred the chicken and place it back in to finish cooking.
While it finishes cooking make your brown rice and assemble your salad!
SO easy! Use the Greek Yogurt instead of Sour Cream. Figure out your containers according to what you need, but this is what I used...
Romaine- 2 Green
Tomato- 1/2 Green
Steamed Corn- 1/2 Green
Chicken- 1 1/2 Red
Greek Yogurt- 1/2 Red
Brown Rice- 1 Yellow (if you only have 1 Yellow left, skip the rice)
Beans- 1 Yellow
Cheese- 1/2 Blue (Or if you have Blue to spare us 1 Blue. Maybe 1/2 cheese and 1/2 Avocado!)

Egg and Veggie Bowl
I realize this is hardly a recipe, but with our busy schedule/having a 9 month old/eating clean I sometimes don't have time to put together a nice dinner. Sometimes my meals are made in the microwave and are still yummy! They just happen to be ready in under 10 minuets!
So by the end of the day I usually have 1-2 green containers (veggies) and 1-2 red containers (protein) to eat. This is so quick and so yummy and meets both of those needs!
Ingredients
2-4 eggs (you can do whatever you need to meet the requirement of red containers for the day)
1 bag of steamable, mixed veggies (entire bag is about 2 greens)
Directions
1. Throw bag of veggies in to the microwave and cook according to bag.
2. While veggies are cooking...crack eggs in to a microwave safe bowl.
3. Beat with a fork
4. Put in microwave and cook for 2 min.
5. Add bag of veggies to eggs and eat!
6** You can add cheese too if you haven't used your blue container yet!

A Year And A Half Later...
So it's been a while. Last time I posted I had just finished running my very first Marathon! It was such a neat experience and I hope to some day do it again! What I didn't mention in that post was right after the marathon my husband and I were going to try and start our family. But when I went to my girly doctor she told me not to get my hopes up. She said due to the stress I had put my body through in training and the weight I had lost we would not be able to conceive for at least 3 months. It was disappointing, but we figured we would focus on some shorter races and allow the winter and holidays to fatten me back up!
Little did we know God had other plans in mind. Just a short month and a half after my race we were pregnant! We were in shock. I didn't believe the lines on my test until taking another that actually spelled out "pregnant".
My pregnancy was wonderful. I didn't have any morning sickness. I thankfully didn't have many cravings. I was able to finish out the school year and still have a good 2.5 months of time off to get ready.
Unfortunately I was unable to continue with running because I couldn't keep my heart rate low enough. I tried a few pregnancy work outs I found on pinterest, but it didn't keep that extra weight off. I walked a lot toward the end when the weather got nice, but by then the damage to my body was done and I was in the "I'm huge anyways...why not eat 10 cookies" stage.
That's a stage right??
Anyways...after our sweet little guy was born I had a really rough time nursing. My milk just wasn't coming in. We tried a few different things to help, including lactation cookies (14 a day!) and different pumping methods, multiple trips to lactation and so on. It was a tough start and eventually we had to switch to all formula. I was very disappointed in myself and my body. I wanted to be able to provide that for him so very badly.
He is now a healthy, strong and happy 8.5 month old. And I am thankful that we were able to still provide for his needs.

Erie Marathon
So it's been a while. A little over 3 months to be exact. Nothing crazy or time consuming has kept me from posting. I just honestly forget about this space sometimes. Even if I set myself up for the next post I forget (Notice there was never a part II to my Vacationing Part I post.) But lately I've been wanting to get on my little corner of the internet world and document something that I worked months and months for.
On the 15th of September I woke up in Erie, Pennsylvania prepared to complete my very first marathon. I literally woke up with butterflies already in my stomach. I had been training all summer for this one race. I would be running 6.2 more miles than I had ever run in my training and in my life. Thankfully I was not running alone. I had the privilege of running with a dear friend, and sister in Christ. This was her second marathon and I was so thankful to have her during training. She kept me going when I wanted to stop. When I would have rather stayed in bed to sleep in, I knew I couldn't because I needed to meet her on the trail at 7am to beat the summer heat. So to you my friend....THANK YOU!
After eating my pre-run breakfast of a bagel, peanut butter and honey we were off! It was A LOT cooler out than we were used to. I was thankful I packed some leggings and longs sleeves!

We had some amazing views during our run.
I have no idea what we are looking at here, but I believe this is around mile 18. Once we hit mile 19 we decided to dedicate each mile to someone or a group of people to get us to the next mile. I'm so glad we did that. Every time my leg started to cramp or I wanted to walk just for a few seconds I could think about who we were dedicating that mile to and power through.
After 4 hours and 33 minuets we finally finished!
I look like a dork, but that was by far the best chocolate milk I think I've ever had in my life!

Getting to see Brett every 5 to 6 miles really helped me power through. He was such a big supporter! If Cinda and I couldn't run together during the week he would run with me. If I need some advice on food or training tips, he was there. Training for a Marathon is VERY time consuming and he allowed me to take the time to train. During the race he would pass off more energy beans and take my empty packs. After the first 5 miles he was there to take my long sleeve shirt. I'm so thankful for him and the amazing support he gave!

A year ago if you told me I was going to run a marathon I would have laughed in your face and thought you were crazy. But this has turned out to be one of the coolest experience of my life so far.

Vacationing (Part I)
Summer has really gotten busy this month. We went on two awesome vacations pretty much back to back. So get ready because I'm about to bog this post down with lots of photos!
Our first vacation was a cruise to the Bahamas! I've never been on a cruise before and was pretty scared since I'm terrified of the ocean and boats (great combo right??). But to be honest I LOVED the cruise! It was so fun and you really couldn't tell you were on a boat!
Tomorrow we'll be visiting Davis, West Virginia!!

Gluten Free Peanut Butter Cookies
A few months ago my sister found out she needed to go Gluten Free. I can't even imagine having to give up foods with gluten in them. I love bread. I love bagels. I love biscuits. I love pasta. I love cookies and brownies....ect.
So I feel pretty bad for her to be honest.
But these cookies do not taste gluten free AT ALL! They are so yummy and so easy! I made them for Fathers Day and nobody knew they were gluten free...until I told them :)
I bet you have the ingredients in your kitchen right now and could make a batch this second!
Ingredients
1 cup Peanut Butter
1 cup Sugar
1 tsp Baking Soda
1 egg
Directions
-Mix Peanut Butter and Sugar
-Add Baking Soda and Egg
-(Add Chocolate Chips too if you want!)
-Roll into balls and place on ungreased baking sheet
-Press fork into cookies twice each way
-Bake for 8-10 min at 350 degrees
Enjoy!
